What are Brettanomyces?

  • a wild strain of yeast that produces acetic acid if provided with lots of sugar
  • gives Saisons, Farmhouse Ales, Oud Bruins, Flander’s Red Ales, etc their characteristic “funk” flavours, = barnyard, horse poo, manure, but in a good way
  • under the right conditions in the hands of a brewmaster, they can create complex desirable flavours
